Abigail's New Favorite Chicken Salad Recipe

I adore chicken salad and it’s my mission in life to try every variety of chicken salad that can be made. The other day while surfing the net I came across a recipe for Chicken Salad Recipe with Cranberries & Pecans on a blog called Culicurious!
To say this a delicious chicken salad does not capture the beauty of this delicious treat to your palette. I love, love, love this chicken salad and have added a link to the original posting at the bottom of the page.

                          Yield: 2 cups (4 sandwiches)

Chicken Salad Sandwich Recipe


This quick and easy chicken salad recipe is a perfect use for left over roasted chicken. The addition of cranberries and pecans makes it a special fall treat.

Ingredients:

  • 1 1/2 cups chopped leftover roasted chicken or rotisserie chicken
  • 1/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/3 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup thinly sliced green onions
  • 8 slices of bread

Method:

  1. Combine all ingredients (except the bread) in a mixing bowl. Stir well.
  2. Toast two slices of bread per sandwich. Top with 1/2 cup of chicken salad.
  3. Cut in half on a bias and serve.

Love Abigail Style


Lately I have been thinking about Love. Maybe it’s because it’s been raining a lot lately and I love to hear the rain hit my roof as I am safely tucked away in bed. Maybe it’s because I am always in love with something or someone. Whatever the case, I got love on my mind.

Each and every time I think of love I think of the fact that it can move mountains, thaw cold hearts and soothe the soul.  Love is so many things to different people. Maybe that’s why I it’s on my mind so much lately.

Love and being in love are amazing feelings. I often wonder if I have crossed the line from love to just being in love with love.

I love unconditionally, for free and forever and always. My love has no limits and it endures great strife and tragedies.  My love has no bounds and it is a love that moves mountains, conquers empires and covers you to the ends of the earth.

Yeah, I am about that kind of love that means more than riches and gold or a vast fortune. My love is as priceless as arts and antiques. My love is what men have died for, cities have been built on, hopes and promises have lived on.

 
I know what love is because I give it freely….

Abigail's Muse is Missing


 
 
There is time when chasing the thing that you want more than breath is a bad idea. Needless to say it’s the bad ideas that are the hardest to walk away from.

Sitting at my desk yesterday I looked out my window and watched as a bird flew back and forth from my new birdhouse to a nest she’d made in a large oak tree. There was nothing spectacular about what the bird was doing something so simple as feeding her family. Like most birds I chase a dream of feeding my need to be a successful writer. But unlike the bird I can’t find a ready supply of success to feed my creative muse.

My muse is petrified of failure and she often hides while I sit and ponder where she is and why she want come out and write. So are the trials and tribulations of chasing a dream.
