I adore chicken salad
and it’s my mission in life to try every variety of chicken salad that can be
made. The other day while surfing the net I came across a recipe for Chicken

Yield: 2 cups (4 sandwiches)
Chicken Salad Sandwich Recipe
This quick and easy chicken salad recipe is a perfect use for left over roasted chicken. The addition of cranberries and pecans makes it a special fall treat.
Ingredients:
- 1 1/2 cups chopped leftover roasted chicken or rotisserie chicken
- 1/3 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/3 cup dried cranberries
- 1/4 cup chopped pecans
- 1/4 cup thinly sliced green onions
- 8 slices of bread
Method:
- Combine all ingredients (except the bread) in a mixing bowl. Stir well.
- Toast two slices of bread per sandwich. Top with 1/2 cup of chicken salad.
- Cut in half on a bias and serve.
