Abigail's New Favorite Chicken Salad Recipe

I adore chicken salad and it’s my mission in life to try every variety of chicken salad that can be made. The other day while surfing the net I came across a recipe for Chicken Salad Recipe with Cranberries & Pecans on a blog called Culicurious!
To say this a delicious chicken salad does not capture the beauty of this delicious treat to your palette. I love, love, love this chicken salad and have added a link to the original posting at the bottom of the page.

                          Yield: 2 cups (4 sandwiches)

Chicken Salad Sandwich Recipe


This quick and easy chicken salad recipe is a perfect use for left over roasted chicken. The addition of cranberries and pecans makes it a special fall treat.

Ingredients:

  • 1 1/2 cups chopped leftover roasted chicken or rotisserie chicken
  • 1/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/3 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup thinly sliced green onions
  • 8 slices of bread

Method:

  1. Combine all ingredients (except the bread) in a mixing bowl. Stir well.
  2. Toast two slices of bread per sandwich. Top with 1/2 cup of chicken salad.
  3. Cut in half on a bias and serve.
