Abigail Enjoys Chicken Salad






I love chicken salad it's one of my favorite spring and summer go to meals. Recently I found a recipe that is light and delicious. As the Spring Showers roll in I'll be eating lots of this recipe.

Lightened-Up Chicken Salad


This Lightened-Up Chicken Salad recipe is made with healthier Greek yogurt and many of the other classic ingredients we all love!

Ingredients:

  • 4 cups diced cooked chicken
  • 1 cup chopped celery
  • 1 cup plain low-fat Greek yogurt
  • 1 cup seedless grapes, halved
  • 1 small shallot, peeled and finely-diced
  • 1/2 cup toasted walnuts
  • 1/3 cup dried cranberries or cherries
  • 1 teaspoon worchestershire sauce
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon Kosher salt

Directions:

  1. Add all ingredients to a large bowl, and toss until combined and evenly-coated.
  2. Serve immediately, or refrigerate in a sealed container for up to 3 days.
